Sometimes life actually is postcard perfect. Me, I don’t ski. But I’ve got a vivid imagination. And if I did do the ski thing, I imagine that after a day carving fluffy white powder down the trails of Taos, I wouldn’t be craving a microgreens salad with a melon foam dressing. No, I think I’d want something hearty and profound, something with structural integrity and steeped in tradition. That’s why it makes perfect sense to me that in Northern New Mexico, in the land of ristras and hatch green, you’ll find a picturesque Bavarian retreat nestled just below the ski lifts in Taos Valley. The building itself could be a set replica for a Connery-era Bond flick set in the Alps. The food looks and tastes the part. And if we do a jump cut to a summer scene, the promise of lounging on the wood deck with an ice cold hefeweizen would be the motivational carrot to dangle before hikers making the last mile back from the trail.
