Stacy Pearl’s New Mexico Recipe

If you live in Santa Fe, you have most likely either enjoyed Stacy Pearl’s food, through her position as chef at Walter Burke Catering or enjoyed her voice and culinary panache, via her weekly “Mouth of Wonder” radio show on KSFR.

I got to know Stacy over the past year through our combined contributions for the about to be released photography book about New Mexico, “A Year or So in the Life of New Mexico: An Uncensored Look at Life in the Land of Enchantment” developed by Rick Carver and published by Albuquerque-based art publishers Fresco Publishing. Stacy wrote, and I shot.

Towards the end of 2010, Stacy and Rick decided that the book should feature an original New Mexican recipe for the book. A recipe based on New Mexico flavor, and sourced from New Mexican ingredients. Introducing: the Pinon Cookie filled with Lime Serrano filling. Oh, wow. I can personally attest that after making them as holiday gifts, they were universally adored and gobbled up with reckless caloric abandon. These are scrumptious. And beautifully colorful. Which is signature Stacy, come to think of it… These images were produced to illustrate the recipe in the book.
