One of the last things I’d expect on the I25 corridor between Santa Fe and Albuquerque is an oasis. And a Persian oasis, at that, complete with a rippling fountain in the sunken dining room, surrounded by opulent drapes. Pars Cuisine features a Mediterranean – Persian, Greek and Turkish cuisine – menu and ambience that’s more authentic than I’d ever have expected there in the midst of major franchise offramp fare. Owners Mohammad and Shahnaz Tafti – she’s the chef, he’s the heart behind the operations – create a totally distinctive food experience – the kind you usually have to travel far more than just down the highway to enjoy.
